Hi team,

Ok I know what you’re thinking… I must be coming down with something if I’m writing twice in 1 week (2 days in a row even!!) but once you try this recipe what, you will understand the need. This smoothie bowl needs to be tasted to be believed. I could not keep this to myself…

Ingredients

1 Banana

1 cup of boiled kumara (I used the bright purple and the orange on the inside but purple on the outside kind)

2 tbsp peanut butter

1/2c almond/coconut milk (I just added what I had left in the carton)

Dates (lots of them)

A dash of maple syrup (is that a thing?)

2 big handfuls of green leaves (I used baby kale and spinach)

Handful of cashews

1tbsp cacao powder

1/4tsp cinnamon

Method

  1. Boil chopped up kumara. Wait until it cools down. I didn’t because I’m impatient but you probably should because I ended up eating a lukewarm bowl haha
  2. Put everything in blender and blend. If it’s too thick, add a splash of water
  3. Serve it in a bowl with your favourite fancy toppings!

You should be left with the creamiest, smoothiest, most chocolatey, amazing smoothie ever. I love this smoothie because of the kumara. Like who thought of this? Because I want to kiss them. It makes me feel like the possibilities are endless!! If a kumara can be in a smoothie, then anything is possible! It’s 2017… kumara is no longer confined to Sunday roasts! How liberating!
